Ok, so queso is no big secret. People have been making it for many moons. But *I* have the low fat, ten minute version, and cool pics to boot!
So to start, you want to find a large microwave safe bowl. I use Pyrex.
Then gather your ingredients:
That is 1 lb of 2% Milk Velveeta, 1 lb of fat free sour cream, and 1 can of rotel. I use mild rotel, because even the mild flavor has a kick.
And you want 1/2 cup fat free chicken stock or broth.
Slice velveeta and put in the bowl with rotel and chicken stock. Microwave on high for 5 to 8 minutes. BE SURE TO STIR EVERY 2 TO 2.5 MINUTES TO PREVENT BURNING! Stirring also allows it to melt more evenly.
Remove from microwave and fold in the sour cream. Return to microwave and heat for 5 minutes.
Remove from microwave, stir, and serve with tortilla chips!
